SUMMER SALSAS
I think summer is the best time to experiment with fresh salsas. The obvious choices are fresh herbs and nice fruits or tomatoes that are abundant in the summer. I am lucky to have plenty of fresh herbs literally in my backyard. We have fresh thyme, rosemary, parsley, cilantro, basil, sage, dill, and chives. I am trying to take advantage of these while I can! These concoctions can be used to top fish, chicken, beef, tomatoes and mozzarella, pasta, really anything that needs some flavor and freshness. I recently made mango salsa and a fresh herb "salsa verde" if you will. The ingredients are listed below and you can adjust the amounts to your liking. These are also just general guidelines and you should add whatever you like and omit things you don't. Once you are finished, let your mixtures rest for at least an hour to give the ingredients a chance to meld together. At the bottom of the page there is a list of other things you can use with herbs to make a salsa that fits your mood!

- Capers
- Shallots
- Scallions
- Pimentos/Roasted Pepeprs
- Dijon Mustard
- Garlic
- Red Wine Vin/Sherry Vin
- Olive oil
- Salt & Pepper
I've made this mango salsa twice already because I love it so much. It's so easy, it's practically like making guacamole and just replacing the avocados with mangoes. Or you could just keep the avocados too! Oooooh avocado and mango salsa sounds yumm!

- Jalapeño
- Cilantro & Parsley
- Honey
- Olive oil
- Salt & Pepper
