I have been craving India food for weeks now. I really wanted one of my favorite dishes that I often get when I see it on the menu. It’s usually called chaat papri and it’s comprised of potatoes & chick peas and is dressed with a creamy and tangy sauce made with yogurt and tamarind chutney. The dish is garnished with cilantro and fried pita crisps, which in my opinion is the best part. The sweet and cold sauce matches perfectly with the soft potatoes and the crunchy pita. It’s pretty amazing with all of the different elements, and one of these days I’m going to try and replicate it. But not today. I was missing a few ingredients for the chaat, but I still managed to put together a pretty delicious dish. I made sautéed fish with cauliflower, rice, vegetable tikka masala, and a yogurt sauce to top it all off. Here’s a recap!
This is what I started with…..
I sautéed onions, mushrooms and peppers until tender. Then I added chopped ginger and garlic and cooked the veggies a bit longer.
I finished the vegetables with a can of chick peas, a can of diced tomatoes, and 1 jar of tikka masala simmering sauce. The sauce needed a little thinning out with some water and then I seasoned it with salt, pepper, and a little sambal for spice. I let it “simmer”as the jar suggested ,for about 10-15 minutes.
In the mean time, I cut up the cauliflower into small pieces and roasted it in the oven with olive oil, salt, and turmeric, until tender. I also cooked plain white rice to go with it.
After the cauliflower and vegetables were finished, I sautéed some tilapia that I seasoned with cajun blackening spices. I assembled the plates and garnished with a sauce I made from plain greek yogurt, cucumber, garlic, lemon zest, lemon juice, and salt.
I was happy with the way it came out! The only thing that would have made it better is garlic naan and a mango lassi. I told you I loved Indian food. Sooo goooood!
